Grills are described by their number of burners, though we found that this did not correlate with performance or capacity. GRATES: The grill grates are made of either cast iron or stainless steel. SIZE OF MAIN COOKING GRATE AND HEAT OUTPUT: Manufacturers typically list the combined total square inches, including warming racks and side burners. More usefully, we list the dimensions of the main cooking grate and how many 4-inch burgers each can fit. Similarly, we only list the BTU (British Thermal Units—a measure of heat output per hour) numbers of the main burner. FEATURES: Some grills offer more extra features than others. GRILLING: We grilled hamburgers and steaks over direct heat, looking for distinct grill marks, well-browned crusts, and moist interiors. We mapped the heat pattern of each grill by covering its preheated surface with white bread slices and examining the toast. INDIRECT COOKING: We prepared pulled pork, keeping the grill at 300 degrees for more than 4 hours. Thermocouples confirmed whether lid thermometers were accurate. We rated the pork on smoky flavor and tender, moist texture. DESIGN: Grills received higher marks if their designs made it easier to set them up and cook. DURABILITY: Models that were hard to roll; lost wheels, doors, or other parts; or showed greater wear and tear received lower scores. CLEANUP: We rated whether grates were easy to scrub clean and whether grills had secure, large grease trays and catch pans that were easy to reach. I then took up training with Sensei Cris Mcniesh in kickboxing and Terry Dunstan former British and cruiser weight champion. I added Brazilian Jiu Jitsu to my repertoire in 2000, followed by Olympic freestyle wrestling in 2001 and I now compete in both these disciplines. My debut MMA fight was in October 2010 and I had a brilliant training camp 16 weeks of intense work. For this fight I also travelled to a camp in Morocco to get away from everything and just focus entirely on the fight. When I got back I was ready to get in there! I train myself and other professional fighters at my gym and fitness centre in Chadwell Heath, which I founded in 2006 after becoming disillusioned with the approach of the larger mainstream clubs. I wanted to give people somewhere to train which had everything a beginner or serious trainer would want from a gym. And so, LDG Fitness Centre in Chadwell Heath was born; giving people a friendly, affordable high quality establishment in which to train. Following the success of the gym in Chadwell Heath, I opened a brand new centrally located Romford branch on January 16 2010. The Centre gained a record number of new members in the first few months, all joining to take advantage of the amazing membership deal, benefiting from an excellent range of brand new equipment and unbeatable selection of fitness and martial arts classes. Together with running two successful fitness centres, I also manage to train twice a day, six days per week! I work on my fitness, strength and conditioning and hone my technique in all disciplines to ensure I am as prepared for my fights as I can be. I am very keen to communicate the passion, self respect and discipline that training in Martial Arts brings me to other people. I have recently been doing more work with young people at youth centres in and around London and also teaching both adults and youngsters at LDG. In terms of my career, I want to work “onwards and upwards” to fulfil my professional potential in MMA. After my win last year, (see fight report against Tommy Kelly as featured in Martial Arts Illustrated) I went on to fight Wayne Brown and secured victory in just 8 seconds, (see fight report featured in Martial Arts Illustrated and video coverage on my site). However, I have suffered a recent setback in my career plans. I now have to conquer an injury I sustained whilst training for my fight. I was due to fight on UCMMA’S HANDS OF WAR 24 on the 22nd of October but during one of the last training sessions, I tore my bicep tendon clean off. Due to medical advice I had to pull out and have it operated on straight away. However, I believe everything happens for a reason – this is a little set back and I plan to be back sometime in 2012, god willing. As a martial artist we are constantly reminded things might not go your way, but through training and understanding of our arts we train our minds to be as strong as our bodies. So with hard work and a positive mental attitude I look forward to seeing you all cage side!

However, I felt something was missing with karate and I subsequently began kickboxing training with Shihan Greg Wallace until he retired in 2001. I then took up training with Sensei Cris Mcniesh in kickboxing and Terry Dunstan former British and cruiser weight champion. I added Brazilian Jiu Jitsu to my repertoire in 2000, followed by Olympic freestyle wrestling in 2001 and I now compete in both these disciplines. My debut MMA fight was in October 2010 and I had a brilliant training camp 16 weeks of intense work. For this fight I also travelled to a camp in Morocco to get away from everything and just focus entirely on the fight. When I got back I was ready to get in there! I train myself and other professional fighters at my gym and fitness centre in Chadwell Heath, which I founded in 2006 after becoming disillusioned with the approach of the larger mainstream clubs. I wanted to give people somewhere to train which had everything a beginner or serious trainer would want from a gym. And so, LDG Fitness Centre in Chadwell Heath was born; giving people a friendly, affordable high quality establishment in which to train. Following the success of the gym in Chadwell Heath, I opened a brand new centrally located Romford branch on January 16 2010. The Centre gained a record number of new members in the first few months, all joining to take advantage of the amazing membership deal, benefiting from an excellent range of brand new equipment and unbeatable selection of fitness and martial arts classes. Together with running two successful fitness centres, I also manage to train twice a day, six days per week! I work on my fitness, strength and conditioning and hone my technique in all disciplines to ensure I am as prepared for my fights as I can be. I am very keen to communicate the passion, self respect and discipline that training in Martial Arts brings me to other people. I have recently been doing more work with young people at youth centres in and around London and also teaching both adults and youngsters at LDG. In terms of my career, I want to work “onwards and upwards” to fulfil my professional potential in MMA. After my win last year, (see fight report against Tommy Kelly as featured in Martial Arts Illustrated) I went on to fight Wayne Brown and secured victory in just 8 seconds, (see fight report featured in Martial Arts Illustrated and video coverage on my site). However, I have suffered a recent setback in my career plans. I now have to conquer an injury I sustained whilst training for my fight. I was due to fight on UCMMA’S HANDS OF WAR 24 on the 22nd of October but during one of the last training sessions, I tore my bicep tendon clean off. Due to medical advice I had to pull out and have it operated on straight away. However, I believe everything happens for a reason – this is a little set back and I plan to be back sometime in 2012, god willing. As a martial artist we are constantly reminded things might not go your way, but through training and understanding of our arts we train our minds to be as strong as our bodies. So with hard work and a positive mental attitude I look forward to seeing you all cage side!

But few people pay that much attention when dealing with fish. Which is too bad, because even fatty fish like salmon can go from tender and moist to chalky and dry in a flash. In the test kitchen we use an instant-read digital thermometer to tell when salmon is done and we’ve always preferred it cooked 125 degrees for the ideal balance of firm, yet silky, flesh. The majority of the salmon we cook is farmed Atlantic, but as we’ve cooked more wild species we started to wonder if 125 was maybe a bit too high. Learn about our favorite instant-read thermometer: https://www.youtube.com/watch?v=ZPMGKQrFsIE To find out, we bought multiples filets of the four most common species of wild Pacific salmon—king (also known as Chinook), sockeye, coho, and chum. We cooked samples of each to both 120 degrees and 125 degrees sous vide, or sealed in a plastic bag and cooked in a temperature-controlled water bath. We also did the same for samples of farmed Atlantic salmon. We then asked tasters, blind to the differences in internal temperature, to pick which sample had the best texture. Everyone preferred the coho, sockeye, and chum samples cooked to 120 degrees and the farmed Atlantic cooked to 125 degrees. While a few folks preferred the king sample at 125 degrees, the majority preferred 120 degrees. These results may sound surprising. After all, salmon is salmon right? Well, not exactly. It turns out that farmed Atlantic salmon differs in two important ways from the half dozen commercial wild varieties caught in the Pacific Ocean: 1. Due to their more sedentary life, the collagen protein in farmed Atlantic salmon contains less chemical cross-links than in wild varieties, which translates into softer flesh. 2. Farmed Atlantic salmon contains more fat than any wild variety and up to 4 times as much fat as the leanest species. Fat provides the perception of juiciness when cooked. So, with naturally firmer flesh, and less fat to provide lubrication, wild salmon can have the texture of overcooked fish even at 125 degrees. By cooking wild salmon to just 120 degrees the muscle fibers contract less and stay moist and tender. Sometime last month we teamed up with Gbemi Okunlola from Alo Nuko to narrate her journey of how she began dressmaking to currently becoming Britain’s youngest bridal designer. I have worked with a number of clients from weddings to commercial projects but for me Gbemi stands out as one of the most inspiring client I have ever worked with. Following the success of her crowd funding campaign where she managed to raise over £30,000, she presented the world with her very first bridal collection, which consisted of 15 pieces. Each piece in the collection embodied raw talent, hard work, artistry and relentless thirst for success, all the qualities Gbemi epitomizes. The project itself was pretty straight forward, as we needed to narrate in 3-4mins who Gbemi is as an individual/creative alongside her vision for the Alo Nuko brand.
